Yes. The sensitivity can be adjusted by tapping on the "Settings" (Gear icon). You will then enter the settings screen. You will see a slider with a sensitivity read out. Simply adjust the slider until the sensitivity meets your requirements.

Yes. On the settings screen there is also a "Damper". This is a useful setting because it introduces a slight delay in the "themometer" registering any sudden sounds. This can be useful when the sensitivity setting is really high and you want to prevent the thermometer bouncing around inbetween words.
